Cheese Making Workshop
In this 6 hour workshop you will learn the secrets of Camembert, one of the most iconic of all French cheeses. You will learn how to develop and mature the bland rubbery curds of cultured, rennet milk into a creamy elegant and fragrant delicacy. Camembert is a cheese that has become synonymous with warm summer evenings, glasses of wine, sunsets and relaxation. An achievement to be truly proud of! This is a hands-on workshop, in which you will make three types of cheese including ricotta and will take them all home with you to care for, mature and ultimately enjoy.
ABOUT YOUR TUTOR
Reared on stinky European raw milk cheeses and spurred on by the lack of flavour in commercial Australian cheeses, Lucy began making her own cheeses when she was given her first cow by neighbours more than 10 years ago. Since then she has gone on to experiment wildly with milk, whey and cream, and - 4 cows, 9 pigs, 4 sheep and a host of poultry later - has developed a beautiful permaculture, almost self-sufficient, small-holding on the edge of the Nattai National Park in the NSW Southern Highlands with her husband and two sons.’
THIS COURSE INCLUDES
All equipment, ingredients and a yummy home-grown, home-made lunch provided, although you are advised to bring along an Esky or large waterproof box to take home your cheeses.
