We are excited to bring you an extraordinary dinner combining the talents of Fairmont Resort Executive Chef John Slaughter and long-time colleague Colin Barker (Executive Chef at The Boathouse, Sydney).

Award-winning Chef Colin Barker is bringing his passion for sustainable seafood to Eucalypt Restaurant for an intimate dinner experience on Saturday 4th August. Having worked as John’s apprentice 20 years ago the pair re-join to bring the sea to the trees for one night only.

Experience a menu combining the freshest seafood, local Blue Mountains produce and decadent flavours. On the night your 5-course dinner will be expertly matched with TarraWarra wines from the Yarra Valley in Victoria, including their notable 2015 Reserve Pinot Noir. Book now for an evening of delicious food, great memories, and fine wine.
